
| Now Available "Freedom Cafe' Southern Comfort Up North: My Journey to Freedom Cafe" An Autobiography Cookbook by Janice Swinton, Author & Chef (Available at Freedom Cafe $18.00) Sample Receipe Coconut Cake Sample Receipe: Coconut Cake 2-3/4 cups all purpose flour 1 can cream of coconut, sweetened (Goya) 1 t. baking powder 4 large eggs, separated 1 t. baking soda 1 T. vanilla extract 1/2 t. salt 1 cup buttermilk 1-3/4 cups sugar 2 sticks of butter, room temp Cream cheese frosting Sweetened Coconut Flakes Preheat oven to 350 degrees. Butter and flour two 9-inch pans with 2 inch sides. In a bowl mix sift flour, baking powder, salt and soda together. Separate eggs. In a separate mixer blend egg whites to soft peaks. Meanwhile beat sugar, 1 can of cream of coconut-sweetened, and butter until creamy; add eggs yolks, one at a time; then add flour mixture and buttermilk mixing well. Fold in the beaten egg whites until well-incorporated. Pour into floured cake pans and bake at 350 degrees until cakes are done(stick toothpick in center and remove clean) and light brown. Use your favorite cream cheese frosting or store bought frosting. |
